Alright, let me tell you about my “Lomo Sandwich” adventure – it was a wild ride, but totally worth it!

So, it all started with me craving something different, something savory. I had some leftover steak in the fridge, and I thought, “Why not try a Lomo Saltado sandwich?” I’d seen it online, looked easy enough, right?
First things first, I gathered my ingredients. Steak (obviously!), an onion, a bell pepper (I went with red for the color), some garlic, soy sauce, vinegar (I used rice vinegar), some aji amarillo paste (couldn’t find the actual peppers), and french fries. Oh, and a crusty roll – gotta have the roll!
Then came the chopping. I sliced the steak into thin strips, not too thick, not too thin. I diced the onion and bell pepper. Minced the garlic. Prep is key, you know?
Next, I cranked up the heat in my wok. Yeah, I used a wok, figure it gives it that “wok hei” flavor, you know? I threw in the steak and stir-fried it until it was browned but not cooked all the way through – gotta keep it tender. Took it out and set it aside.
After that, I tossed in the onions and bell peppers and stir-fried them until they were soft. Then, in went the garlic. Cooked it for like, 30 seconds, until it was fragrant, and being careful not to burn it.

Here’s where the magic happens: I added the soy sauce, vinegar, and aji amarillo paste. Stirred it all together and let it simmer for a minute or two. Then I threw the steak back in and mixed everything together until the steak was cooked through and coated in that glorious sauce.
Now for the fries! I cheated and used frozen ones. I fried them up until they were crispy and golden brown. Salted them, of course.
Finally, assembly time! I sliced open the roll, piled in the lomo saltado, and topped it with a generous amount of french fries. Closed the roll, and boom! Lomo Sandwich achieved!
Did it look exactly like the pictures online? Nope. Was it messy as hell to eat? Yup. Was it absolutely delicious? You bet your bottom dollar! The savory steak, the slightly tangy sauce, the crispy fries… it was a flavor explosion in my mouth.
I’d definitely make it again. Maybe next time I’ll try making my own fries. And I’ll definitely have a stack of napkins on hand. This sandwich is not for the faint of heart!

Lessons learned: Don’t be afraid to experiment in the kitchen. Even if it doesn’t turn out perfect, it’ll probably still taste good. And always, always have napkins ready!
