Okay, so I’ve been on this huge Caribbean kick lately, especially when it comes to sweets. I decided to dive in and try making some classic Caribbean desserts myself. Let me tell you, it was a journey!

Getting Started
First, I scoured the internet for recipes. I wanted something authentic, but also something I could actually pull off with my, shall we say, developing baking skills. I landed on a few that seemed promising: a rum cake, some coconut drops, and something called “sweet potato pudding” (which sounded intriguing).
The Rum Cake Adventure
The rum cake was first up. I gathered my ingredients – flour, sugar, butter, eggs, the usual suspects. And, of course, a good amount of dark rum! I followed the recipe pretty closely, mixing everything together, pouring it into a bundt pan, and popping it in the oven.
The waiting was the hardest part! The kitchen started to smell amazing, all warm and buttery and rum-y. When it was finally done, I let it cool, then drenched it in even more rum glaze. Because, why not?
The result? Pretty darn good! It was moist, flavorful, and definitely had a kick. I might have gone a little overboard with the glaze, but hey, it’s a rum cake, right?
Coconut Drops – A Simpler Success
Next up were the coconut drops. These were much simpler. Basically, you just combine shredded coconut, sugar, some spices, and a bit of water, then drop spoonfuls onto a baking sheet and bake until golden.

- Shredded some fresh coconut (okay, I bought pre-shredded, don’t judge).
- Mixed it with sugar and spices.
- Baked them until they were golden and crispy.
These were a winner! Super easy, and the perfect little bite of coconutty sweetness.
Sweet Potato Pudding – The Unexpected Star
Finally, the sweet potato pudding. This one was the most unfamiliar to me. I boiled and mashed sweet potatoes, then mixed them with coconut milk, sugar, spices (lots of cinnamon and nutmeg), and a bit of flour. Then, I poured the mixture into a baking dish and baked it until it was set.
Honestly, I wasn’t sure what to expect. But wow! It was surprisingly delicious. It was like a cross between a custard and a cake, with this warm, comforting, spiced flavor. Definitely a keeper!
The Verdict
My Caribbean dessert experiment was a success! I learned a lot, had some fun, and ended up with some seriously tasty treats. I’m definitely going to keep exploring this cuisine – there are so many more desserts I want to try! Maybe I’ll tackle some guava duff next time… who knows!
