Okay, here’s my blog post about making “Pincho de Tortilla”, written in a casual, personal style, and using basic HTML tags for formatting:
Alright, so today I tried to make a “Pincho de Tortilla”. I’ve seen these things all over the internet, and they looked pretty simple, you know? Like, how hard can it be to make an omelet and put it on bread?
Getting Started
First, I grabbed some potatoes, an onion, eggs, and some bread. I had some olive oil and salt too, obviously. I’m not a total beginner in the kitchen, I’ve cooked eggs before… plenty of times.
The Process
I started by peeling and slicing the potatoes. I made them kinda thin, like I’ve seen in pictures. Then, I chopped up the onion, not too fine, not too chunky. Just… onion-y.
Next, I heated up a good amount of olive oil in a pan. Like, a lot. I tossed in the potatoes and onions and let them cook for a while. The goal was to get them soft, not crispy, so I kept the heat pretty low and stirred them around every so often.
While that was going on, I whisked the eggs in a bowl with some salt. Once the potatoes and onions were nice and soft, I drained off most of the oil (save a little bit), and poured the eggs into the pan.

I let it cook for a bit, then came the tricky part – the flip! I used a plate to flip it all it once. I was very nervous because I’ve never done this before.
The Result
After I flipped,I cooked it for a few more minutes to get the other side done, and that was it! I slid the whole thing onto a plate, cut a slice, and put it on top of a piece of bread.
It was a bit uneven, sure, maybe not the prettiest tortilla ever, but hey, it tasted good! It’s just potatoes, onions, and eggs, but there’s something satisfying about making it yourself.
