Grabbing Ingredients & Gear
First I raided my pantry for:

- A can of sweet corn
- All-purpose flour
- Salt and sugar
- Oil for frying
- Two eggs
- Cinnamon powder
Dug out my smallest pot, a mixing bowl, spatula and this cheap piping bag I bought ages ago.
Making That Corn Mash
Drained that corn can straight into the blender, whizzed it until it looked like baby food. Poured the gloop into my pot with half cup water and spoon of sugar. Cranked the stove to medium heat and stirred like crazy for 5 minutes until it thickened up like glue. Smelled kinda weird ngl.
Mixing the Dough
Dumped the hot corn mash into my mixing bowl, chucked in one cup flour immediately. Started stirring with the spatula but it turned into lumpy playdough real fast. Cracked in two eggs hoping it’d smooth out – big mistake. Now I’ve got yellow sludge with flour chunks. Panic-added another half cup flour and kneaded by hand until it stopped sticking to my fingers. Looked ugly but workable.
Frying Drama
Filled my deepest skillet with oil halfway, heated till a breadcrumb sizzled. Shoved that ugly dough into the piping bag – tip kept clogging so I snipped bigger hole. Squeezed out fat wormy shapes over the hot oil. First batch sank like rocks! Realized oil wasn’t hot enough – cranked heat higher. Second batch puffed up nice but turned coal-black in 90 seconds. Nearly set off smoke alarm.
Sugar Fix & Taste Test
Fished out the survivors onto paper towels. Mixed cinnamon with sugar in a plate, rolled the churros in it fast before they cooled. Crunch was decent but tasted heavy like fried cornbread. Kids took one bite and ran away. Mine had weird chewy bits where flour didn’t mix right. Dipped in chocolate sauce to save it – barely worked.

Cold Hard Truth
Lessons learned:
- Corn paste MUST be smooth before adding flour
- Add eggs slowly or dough goes nuclear
- Oil thermometer ain’t optional – mine was clearly not accurate
- These ain’t replacing regular churros anytime soon
Honestly? Might just buy frozen next time. Recipe made my kitchen smell like burnt popcorn for hours. Total time wasted: 2 hours including cleanup.
