Okay, so I got curious the other day, really wanted to figure out what folks in Liberia eat as a side dish. You know, like when you have your main meal, what goes with it?

My First Steps
I started poking around online, just typing in the basic stuff like “Liberian side dishes”. Honestly, it wasn’t super clear at first. Lots of results popped up, but many seemed like main courses to me, not exactly what I’d call a ‘side’ in the way I usually think of it, like a small scoop of something next to the big stuff.
I kept seeing things mentioned over and over, like different kinds of rice dishes, but rice felt more like the base, you know? Like the thing everything else goes on.

So I tweaked my search a bit. Started looking at common Liberian meals and what they’re served with. That’s when things started to click a little better. I stumbled across something called Liberian Peanut Soup quite a few times.
Now, initially, I thought, “Soup? As a side dish?”. It sounded pretty hearty. The descriptions I found mentioned stuff like:

That sounds like a whole meal in a bowl, right? But then I saw the key phrase repeated almost everywhere: “served hot, typically with rice”.

Figuring it Out
Aha! That seemed to be the missing piece for me. It wasn’t about a small, separate plate like I might expect here. It seems like in Liberia, the “side dish” concept is often about the rich stews or soups that are served alongside or on top of the main staple, which is usually rice.
So, while Peanut Soup has a lot going on and could definitely be a meal on its own, its common role is to accompany the rice. It functions like a side dish in that context, making the rice flavorful and completing the meal.
It’s less about a tiny portion of something extra and more about a flavorful, often soupy or stewy, component served with the carbohydrate base. So, things like Peanut Soup, and probably other stews and sauces, fill that role. It’s just a different way of putting a meal together than I was first thinking.
So yeah, that was my little journey trying to understand Liberian side dishes. It basically comes down to what delicious stuff they serve with the rice!
