Okay, so, picture this: I decided to make a “slay baddie potato” for dinner last night. Sounds weird, right? But trust me, it’s a thing. Basically, you take a regular potato and turn it into something fabulous. I saw it all over the internet and thought, “Why not?”
First off, I grabbed a big ol’ russet potato from my pantry. I gave it a good scrub because, you know, dirt isn’t exactly a tasty ingredient. Then, I poked it a few times with a fork – apparently, this helps it not explode in the microwave. Don’t want a potato massacre in my kitchen.
Next, I popped it in the microwave for about five minutes, flipped it over, and gave it another five. I wanted it to be soft enough to mash but not, like, mushy. While that was happening, I started prepping the fun stuff.
I raided my fridge and found some leftover chili, shredded cheese, and a sad-looking avocado that was on its last legs. This is where the “baddie” part really kicks in. You can use whatever toppings you have on hand, honestly.
Mixing it up
- Chopped some onions.
- Minced a bit of garlic (because garlic makes everything better).
- Diced that avocado before it turned completely brown.
Once the potato was done, I let it cool for a minute – hot potato fingers are not a vibe. Then, I sliced it open lengthwise and carefully scooped out the insides into a bowl. I added a big chunk of butter, some salt, pepper, and a dash of milk to the potato guts. Mixed it all up until it was nice and fluffy, not that kind of chunky.
I stuffed that fluffy potato mix back into the skins. It was looking pretty good at this point, but not “slay” good yet. Time for the toppings! I spooned a generous amount of chili over each potato half, then piled on the shredded cheese. I’m talking mountains of cheese, people.
Finishing Touch
Into the oven it went, just until the cheese was all melted and bubbly. When I took it out, I topped it with a dollop of sour cream, some of those chopped onions, a sprinkle of garlic, and, of course, the diced avocado. Oh, and a dash of hot sauce because I like a little kick.
Let me tell you, this “slay baddie potato” was insane. It was so good! The creamy potato, the spicy chili, the melty cheese, the freshness of the avocado, everything was just working. It’s like a party in your mouth, and everyone’s invited. Definitely a win for a random weeknight dinner. I will try this again!
