Okay, so, today I’m gonna talk about the food I tried making from the Central African Republic. It was quite the adventure, let me tell you!

First off, I had to figure out what kind of dishes are even made in the Central African Republic. A quick search gave me an idea. It seems like their food is a mix of a bunch of cultures and uses a lot of what they grow locally. I saw some familiar stuff like cassava and plantains, which I’ve cooked with before, so that’s a good start, I suppose.

Finding Recipes

Next, I dug deeper for some actual recipes. I found a few names that kept popping up: Egusi soup, Chichinga, and something called Chicken Nyembwe.

  • Egusi soup sounded interesting – it’s made with these egusi seeds, plus tomatoes, onions, chili peppers, and palm oil. I’ve never heard of “egusi seeds” before.
  • Chichinga is basically just grilled goat meat on sticks, which sounded simple enough.
  • Chicken Nyembwe looks like another traditional dish that I might try.

The Shopping Trip

Now, for the fun part – getting the ingredients. I found the basic stuff like chicken, tomatoes, onions, and chili peppers easily. But those egusi seeds? No luck. I went to a couple of different stores, even some that sell international foods, but nada.

Making the Food

Since I couldn’t find egusi seeds, I decided to try the Chichinga first. I got some goat meat, cut it up, and marinated it. Grilling was straightforward, and the smell was amazing! The Chicken Nyembwe was a bit trickier, but I managed. Cooking it took some time, but the house smelled fantastic.

Alright, time to eat! The Chichinga was super tasty. The goat meat was tender and had a nice smoky flavor. The Chicken Nyembwe was good too, and the sauce was rich and flavorful. Honestly, it was better than I expected.
